1, product formula

Fine white fans 13 kg, sugar 17 kg, 10 kg of caramel, 17 kg of lard, 500 g of cooked sesame seeds, 25 kg of peanut oil.

2, process flow

Fans oil → fried → cooling → broken → sugar → molding → packaging → finished product.

3, processing points

(1) Over the oil. When the peanut oil is slightly warmed to not hot, put the fans in, soak for 15 minutes and drain to spare oil. If the fans are relatively dry, the oil temperature may be slightly lower; if the fans are relatively wet, the oil temperature may be slightly higher.

(2) fried. Put the lard in a wok, heat it to about 150°C, and fan it in batches and puff it for 10-20 minutes to make the fan completely foamed; remove and drain, cool, break, and break the length of the thin strip about 5cm. Not too broken. During the frying process, the frying cannot be excessive; otherwise, the fan will have a yellow color and affect the appearance of the finished product.

(3) Sugar. Put white sugar and sugar into the pan, add 150-200 grams of lard and dip it to 115°C or so. Use bamboo chopsticks to pull the wire away from the fire; then place the shattered fans and mix gently. The success or failure of caramel mainly lies in the proportion of syrup and the degree of sucrose. If the caramel is not enough, the viscosity is too small to allow the fans to stick together; if the caramel is too heavy, the product will be yellow in color, the texture will become hard and the sweet taste will be impure.

(4) molding. Put the above material into a wooden gate with a height of 4 cm and a length and width of 56 cm. Sprinkle a few cooked sesame seeds (about 1% of the product) at the bottom of the gate, pour it out with a wooden stick, and cut it to a width of 7 cm. Squares.

(5) Packaging. The product can be packaged with cellophane or plastic film.
