According to the Japan Forest Research Institute, there have been many technologies for producing bioethanol from wood. However, in order to pursue efficiency in the production of bioethanol, chemical treatment or high-temperature heat treatment is generally adopted. Therefore, ethanol produced can only be used as Fuel use. The new technology of the institute does not take chemical treatment or high-temperature heat treatment in the brewing process, but mixes the crushed wood chips with mineral water in an environment of 80 ° C or less, and adds enzymes and yeast for food production to ferment and distill. Finally, a distillate with an alcohol content of about 30% can be obtained. In the experiment, the distillate obtained by fermentation of cedar and birch, etc., respectively, has a characteristic aroma of each of these trees.

However, the institute also said that this "tree wine" must confirm its safety before the final taste. The institute plans to work with companies to launch the world's first bottle of "tree wine" by 2020.
